Admiral Collingwood
During 2006 we were very busy at the dairy developing a new wash rind cheese this has been developed using a continental technique whereby the rind is washed regularly in Brown Ale made in 1kg and 2kg rectangular moulds. This semi-soft cheese, once ripened is smooth and succulent, melting on the tongue with a tangy after taste from the ale.
European cheesemakers have a long history of washing cheese in solutions from marc, perry and whisky to gin, beer and salted water. This whole process encourages a secondary ripening, this involves a pinking up of the rind and a softening of the curd.
The cheese gets its name from a Northumbrian sea-faring hero "The Admiral Collingwood" this ties in with the history of North Doddington Farm as this is a Crown Estate owned indirectly by the Navy.
Admiral Collingwood was second in command at the Battle of Trafalgar and many historians believe he was instrumental in the defeat of the French. It took a further 99 years before the Entente Cordiale was signed between Britain and France in 1904.
The Admiral Collingwood cheese is a marriage of good Northumbrian cheese washed in Brown Ale using a French washing technique. We feel the wonderful flavours this imparts are worthy of the cheese's grand title.
