Mrs Bells Salad Cheese (Fettle) 150g General Group
Mrs Bells Salad Cheese is handmade from fresh, whole ewes milk giving it a distinctive creaminess and subtle taste. Lightly salted and matured over a 14 day period, the cheese develops its soft, slightly crumbly texture with a sweet piquant flavour. Formerly known as Yorkshire Fettle, this was the very first cheese developed by Judy Bell in 1987. It has a special place in the history of Shepherds Purse Cheeses. Made to an adapted Feta recipe, this is Yorkshire's version of a fresh salad style cheese. We make it with 100% ewes milk which made it a hit with even the most discerning feta lovers all over the world. It is matured to allow the salt to infuse into the whole cheese and the hand-waxed to extend its shelf life without altering the fresh creamy flavour. We had our wrists slapped over the name Yorkshire Fettle and a PDO (Protected Designation of Origin) was awarded to Feta which meant it could only be made in Greece. We now call this cheese Mrs Bells Salad Cheese, however, it remains the same cheese, a feta with true Yorkshire character.
