When our supply of buffalo milk dried up in mid-2014, we faced a challenge: how to keep producing this exceptional cheese. The solution, starting our own Water Buffalo herd. Since October 2014, we have been milking our herd daily, now producing around 150 litres of rich milk every day.
This blue cheese boasts a delicate flavour with subtle notes of hay, combined with a luxuriously creamy texture thanks to the high fat content of buffalo milk. Its a unique and indulgent addition to our Cave Range that cheese lovers wont want to miss.
